2 large sweet potatoes, peeled and sliced
1/4 c. packed brown sugar
2 Tbsp. butter
2 Tbsp. orange juice
½ tsp. cinnamon
2 cups miniature marshmallows
- Pre-heat oven to 400°
- Peel and cube sweet potatoes.
- Boil in water 8 – 10 minutes until tender.
- Drain and put back in saucepan. Mash with a potato masher.
- Stir in the brown sugar, butter, orange juice to taste and ½ tsp. ground cinnamon.
- Spread the sweet potato mixture into a 8 x 8 inch pan.
- Sprinkle miniature marshmallows over the top.
- Bake at 400° for 10 minutes.
