Sweet Potato Casserole

2 large sweet potatoes, peeled and sliced
1/4 c. packed brown sugar
2 Tbsp. butter
2 Tbsp. orange juice
½ tsp. cinnamon
2 cups miniature marshmallows

  1. Pre-heat oven to 400°
  2. Peel and cube sweet potatoes.
  3. Boil in water 8 – 10 minutes until tender.
  4. Drain and put back in saucepan. Mash with a potato masher.
  5. Stir in the brown sugar, butter, orange juice to taste and ½ tsp. ground cinnamon.
  6. Spread the sweet potato mixture into a 8 x 8 inch pan.
  7. Sprinkle miniature marshmallows over the top.
  8. Bake at 400° for 10 minutes.
