Egg Blossoms

Ingredients

  • Phyllo dough pastry cups
  • ½ cup grated Parmesan cheese
  • 4 eggs
  • 1 Tbsp. finely chopped onion
  • 1 Tbsp. finely chopped green pepper
  • 1 Tbsp. finely chopped tomato

 Directions

  1. Place phyllo cups on a greased baking sheet.
  2. In a large bowl, whip eggs until well mixed.
  3. Mince onion, green pepper and tomato into very small pieces.
  4. Add to egg mixture. Mix in Parmesan cheese.
  5. Divide mixture among the phyllo cups.

Place on a baking sheet. Bake at 350 degrees F for 25-30 minutes or until eggs are completely set and pastry is golden brown.
