Pumpkin Muffins

Ingredients:

1 ¾ cup flour

1/2 cup sugar

1 Tablespoon baking powder

½ teaspoon salt

1 teaspoon cinnamon

½ teaspoon nutmeg

1/8 teaspoon ground cloves

¾ cup milk

1/3 cup oil

1 egg

1 cup canned pumpkin

Directions:

  1. Preheat oven to 400˚
  2. Spray muffin tins with cooking spray. (12 large or 24 mini)
  3. In a medium bowl, combine flour, sugar, baking powder, salt, cinnamon, nutmeg, cloves. Mix well.
  4. In a small bowl, combine milk, oil, egg and pumpkin. Beat well.
  5. Add liquid ingredients into the flour mixture all at once. Stir just until dry ingredients are moistened. (Batter will be lumpy.)
  6. Divide batter evenly into muffin cups.
  7. Bake at 400˚ for 15-20 minutes or until toothpick inserted in center comes out clean.
