Macaroni and Cheese

Ingredients:
2 cup of dry macaroni
3 T. butter
2T. flour
1
 cup of milk
8 oz. or 1 cup of cheese.

Topping: Ritz Crackers

Directions:

Pre-heat oven to 400 degrees

In a pot bring water to a boil. Add dry macaroni and stir often.  Cook for approximately 12 minutes, or until the macaroni is the desired consistency.

While the macaroni is cooking, prepare the cheese sauce.

Cheese sauce: In a small pot melt the butter over medium heat.  When melted, stir in flour until it forms a smooth paste.  Gradually add milk and stir constantly until the milk is steaming.  Grate or chop cheese into small pieces.  Gradually add cheese and stir constantly until the cheese is melted.

Drain the macaroni with a colander. Make sure it is completely drained.   Add macaroni to the cheese sauce and stir together.

Pour mixture into a greased baking dish.

Crumble Ritz crackers on the top if desired.

Bake in oven for 10 minutes.
