1 lb. carrots grated
½ cup raisins
2 cups pineapple tidbits drained
1 small container pineapple yogurt
1/3 cup mayonnaise
2 Tbsp. sugar
1/8 tsp. salt
- Place ½ cup of raisins in a bowl and cover with hot water. Let sit.
- In a small bowl combine yogurt, mayonnaise, sugar and salt to make the dressing.
- Wash and peel 1 lb. bag of carrots (about 6). Shred carrots with a food processor using the shredding disc.
- Place carrots in a big bowl.
- Drain off the pineapple juice, and mix pineapple tidbits in with the carrots.
- Drain off the raisins and add raisins to the carrot and pineapple mixture.
- Stir the dressing into the carrots, pineapple and raisins.
8.. Refrigerate until ready to serve.
