Carrot Salad

1 lb. carrots grated
½ cup raisins
2 cups pineapple tidbits drained
1 small container pineapple yogurt
1/3 cup mayonnaise
2 Tbsp. sugar
1/8 tsp. salt

  1. Place ½ cup of raisins in a bowl and cover with hot water. Let sit.
  2. In a small bowl combine yogurt, mayonnaise, sugar and salt to make the dressing.
  3. Wash and peel 1 lb. bag of carrots (about 6). Shred carrots with a food processor using the shredding disc.
  4. Place carrots in a big bowl.
  5. Drain off the pineapple juice, and mix pineapple tidbits in with the carrots.
  6. Drain off the raisins and add raisins to the carrot and pineapple mixture.
  7. Stir the dressing into the carrots, pineapple and raisins.

8..  Refrigerate until ready to serve.
