Chocolate Chip Meringue Drops

  • 2 egg whites
  • 1/8 teaspoon salt
  • 1/8 teaspoon cream of tartar
  • 3/4 cup white sugar
  • 6 ounces semisweet chocolate chips

Directions

  1. Preheat oven to 300 degrees F (150 degrees C). Line baking sheets with parchment paper.
  2. Separate eggs. Place the 2 egg whites in a medium size bowl.  If the yolk breaks, discard the entire egg and start over.  Egg whites will not whip if it contains any yolk.
  3. Beat egg whites, salt, cream of tartar, and sugar until the meringue holds stiff peaks.
  4. Fold in the chocolate chips.
  5. Place 1 teaspoonful of meringue on the lined cookie sheets. Cookies have to be small (the size of a Hershey’s kiss).
  6. Bake at 300 degrees F for 25-30 minutes.
