Shepard’s Pie

1 lb. Ground Beef
½ cup chopped onion
1 can condensed tomato soup
1 16 oz. can of green beans or corn drained
1 ½ cup water
¼ tsp. salt
2 Tablespoons butter
1 ½ cup instant mashed potato
2/3 cup milk
½ cup shredded cheddar cheese.

Pre-heat oven to 400°

Prepare Meat Filling:

In a large skillet cook ground beef and onion until meat is thoroughly cooked. Drain off fat.  Stir in tomato soup.

Make Mashed Potato

Combine 1 ½ cup water, salt and butter in a small pot. Cook over medium high heat until mixture just starts to boil.  Remove heat and stir in 1 ½ cup instant mashed potato flakes and 2/3 cup milk.

Layer the casserole:

Place hamburg mixture into the bottom of a 1 ½ qt. casserole dish.

Sprinkle with a layer of drained green beans or corn.

Drop mashed potato on top of meat and vegetable mixture. Smooth the top.  Sprinkle with cheese.

Baked uncovered in a 400° oven for 10-20 minutes.
