Red Beans and Rice

2 stalks celery, chopped
½ onion minced
1 Tablespoon butter
1 can of kidney beans, drained
1 can coconut milk
½ cup water
8-10 shakes of hot pepper sauce
2 cups of uncooked minute rice

Directions

  1. In a frying pan sauté celery and onions with butter.
  2. In a medium size pot combine kidney beans (drain and rinse first), coconut milk, water, hot pepper sauce and rice. Stir in onions and celery.
  3. Bring to a boil. Turn down heat and simmer for about five minutes or until the water is absorbed. If it is too dry add a little water.
  4. Serve with additional hot sauce as desired.
