Lemon Poppy Seed Muffins

Ingredients:

1 ¾ cup flour

2/3 cup sugar

1 Tablespoon baking powder

½ teaspoon salt

1 Tablespoon poppy seeds

1/2 cup milk

1/3 cup oil

1 Egg

2 Lemons juiced and zested

Directions:

  1. Preheat oven to 400˚
  2. Spray muffin tins with cooking spray. (12 large or 24 mini)
  3. Cut Lemons in half. Using a juicer squeeze out the juice. Discard seeds. Zest Lemon into the juice.
  4. In a medium bowl, combine flour, sugar, baking powder, salt and poppy seeds.
  5. In a small bowl, combine milk, oil, egg,
  6. Add liquid ingredients into the flour mixture all at once. Stir just until dry ingredients are moistened. (Batter will be lumpy.)
  7. Fold in lemon juice and lemon zest.
  8. Divide batter evenly into muffin cups.
  9. Bake at 400˚ for 15-20 minutes or until toothpick inserted in center comes out clean.
