Lemon Poppy Seed Muffins
Ingredients:
1 ¾ cup flour
2/3 cup sugar
1 Tablespoon baking powder
½ teaspoon salt
1 Tablespoon poppy seeds
1/2 cup milk
1/3 cup oil
1 Egg
2 Lemons juiced and zested
Directions:
- Preheat oven to 400˚
- Spray muffin tins with cooking spray. (12 large or 24 mini)
- Cut Lemons in half. Using a juicer squeeze out the juice. Discard seeds. Zest Lemon into the juice.
- In a medium bowl, combine flour, sugar, baking powder, salt and poppy seeds.
- In a small bowl, combine milk, oil, egg,
- Add liquid ingredients into the flour mixture all at once. Stir just until dry ingredients are moistened. (Batter will be lumpy.)
- Fold in lemon juice and lemon zest.
- Divide batter evenly into muffin cups.
- Bake at 400˚ for 15-20 minutes or until toothpick inserted in center comes out clean.
