Gingerbread Cookies

½ cup shortening
½ cup sugar
1 teaspoon baking powder
1 teaspoon ground ginger
½ teaspoon baking soda
½ teaspoon ground cinnamon
½ teaspoon ground cloves
½ cup molasses
1 egg
1 Tablespoon vinegar
2 ½ cups flour

  1. In a mixing bowl beat shortening with an electric mixer on medium for 30 seconds. Add sugar, baking powder, ginger, baking soda, cinnamon and cloves.  Beat until well combined.  Beat in molasses, egg and vinegar.  Stir in the remaining flour.      
  2. Divide dough in half and form into two balls.
  3. Grease a cookie sheet.
  4. On a lightly floured surface, roll one half of the dough (one ball) until it is 1/8” thick. Using cookie cutters, cut into desired shapes. Place on prepared cookie sheets.
  5. Bake for 5-6 minutes or until edges are light brown. When cooled, decorate cookies with frosting, candies and colored sugars.
