Crunchy Baked Fish Sticks

1 pound fish fillets (Haddock, Cod, or Talapia) without skin
2 eggs
1 Tablespoon milk
1 cup flour
½ teaspoon salt

¼ teaspoon pepper
3 cups Panko Crumbs

Preheat oven to 400°

Cut fish into small “fish stick” pieces

In a bowl combine flour, salt and pepper

In a second small bowl, whip eggs and milk.

Place Panko crumbs in a third bowl.

Dip the fish sticks into the flour mixture, the egg mixture and then the Panko crumbs. Place coated fish sticks on a greased cookie sheet.

Bake for 5 minutes. Turn over and bake on the other side for 5-10 more minutes.  Fish should be opaque and flake easily.
