Sweet Potato

2 cups flourbiscuits
4 teaspoons baking powder
1 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon allspice
3 Tablespoons brown sugar
½ cup shortening
1 cup mashed sweet potato-drained
1/3 cup milk
1 Tablespoon melted butter
1 Tablespoon brown sugar

  1. Preheat Oven to 425°
  2. Measure flour, baking powder, salt, cinnamon, allspice, and brown sugar into a bowl.
  3. Cut in shortening with a pastry blender.
  4. Stir in the sweet potato and the milk.
  5. Round up the dough and knead lightly 8 times on a floured pastry cloth.
  6. Roll with the floured rolling pin until ½” thick.
  7. Cut with a floured biscuit cutter and place on ungreased baking sheet.
  8. Brush tops of biscuits with melted butter and lightly sprinkle with brown sugar.
  9. Bake 10-12 minutes or until golden brown

 

Makes 8 large or 20 mini biscuits
