Quesadilla with Re-Fried Beans

8   8”flour tortillas
Salsa
1 can refried beans
1 cup shredded Monterey Jack Cheese

Sour cream

Directions:

  1. Spread a layer of refried beans on a tortilla.
  2. Place the bean-topped tortilla in a skillet (sprayed with cooking spray) on medium high with the bean side up.
  3. Spread a thin layer of salsa over the beans.
  4. Sprinkle generously with cheese, and place another tortilla on top.
  5. Cook until cheese is melted. Flip and brown the other side.
  6. Remove Quesadilla from the pan, and repeat the process with the other tortillas.
  7. Cut quesadillas into wedges and serve with additional salsa and sour cream.
