8 8”flour tortillas
Salsa
1 can refried beans
1 cup shredded Monterey Jack Cheese
Sour cream
Directions:
- Spread a layer of refried beans on a tortilla.
- Place the bean-topped tortilla in a skillet (sprayed with cooking spray) on medium high with the bean side up.
- Spread a thin layer of salsa over the beans.
- Sprinkle generously with cheese, and place another tortilla on top.
- Cook until cheese is melted. Flip and brown the other side.
- Remove Quesadilla from the pan, and repeat the process with the other tortillas.
- Cut quesadillas into wedges and serve with additional salsa and sour cream.
