Bacon and Cheese Frittata

  • 6 eggs
  • 1/2 cup milk
  • 2 tablespoons butter or margarine, melted
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup chopped onions
  • 5 bacon strips, cooked and crumbled
  • 1 cup shredded Monterey cheese

Directions

  1. Pre-heat oven to 400 degrees.
  2. Cook bacon and crumble into small pieces.
  3. Chop onions into small pieces.
  4. In a bowl, beat eggs, milk, melted butter, salt and pepper.
  5. Stir in onions, bacon and cheese.
  6. Pour into a greased 11-in. x 7-in. x 2-in. baking dish.
  7. Bake, uncovered for 25-30 minutes or until a knife inserted near the center comes out clean.
