Yellow Cake

¾ cup butter
3 eggs
2 ½ cups flour
2 ½ teaspoons baking powder
½ teaspoon salt
1 ¾ cups sugar
1 ½ teaspoons vanilla
1 ¼ cups milk

  1. Pre-heat oven to 375°
  2. Grease and flour two 8” or 9” round or 9” x 13” cake pan(s).
  3. In a bowl, stir together flour, baking powder, and salt.
  4. In another bowl, beater butter with an electric mixer on medium speed for 30 seconds. Gradually add sugar, beating until well combined. Beat for 2 minutes.  Add eggs one at a time, beating well after each addition.  Beat in vanilla.  Add flour mixture and milk, beating on low speed after each addition
  5. Spread batter into prepared pans dividing batter equally.
  6. Two 8” round pans: bake for 30-35 minutes
  7. Two 9” round pans: bake for 20-25 minutes
  8. One 9’ x 13” pan: bake for 25-30 minutes.
  9. Cool cake for exactly 10 minutes on a wire rack.
  10. Remove layers from pans and cool completely before frosting.
  11. Place bottom layer on a plate. Frost only the top.  Set the second cake round on top carefully.  Cover top and sides with frosting.
