Pumpkin Muffins
Ingredients:
1 ¾ cup flour
1/2 cup sugar
1 Tablespoon baking powder
½ teaspoon salt
1 teaspoon cinnamon
½ teaspoon nutmeg
1/8 teaspoon ground cloves
¾ cup milk
1/3 cup oil
1 egg
1 cup canned pumpkin
Directions:
- Preheat oven to 400˚
 - Spray muffin tins with cooking spray. (12 large or 24 mini)
 - In a medium bowl, combine flour, sugar, baking powder, salt, cinnamon, nutmeg, cloves. Mix well.
 - In a small bowl, combine milk, oil, egg and pumpkin. Beat well.
 - Add liquid ingredients into the flour mixture all at once. Stir just until dry ingredients are moistened. (Batter will be lumpy.)
 - Divide batter evenly into muffin cups.
 - Bake at 400˚ for 15-20 minutes or until toothpick inserted in center comes out clean.
