Ingredients
- Phyllo dough pastry cups
 - ½ cup grated Parmesan cheese
 - 4 eggs
 - 1 Tbsp. finely chopped onion
 - 1 Tbsp. finely chopped green pepper
 - 1 Tbsp. finely chopped tomato
 
Directions
- Place phyllo cups on a greased baking sheet.
 - In a large bowl, whip eggs until well mixed.
 - Mince onion, green pepper and tomato into very small pieces.
 - Add to egg mixture. Mix in Parmesan cheese.
 - Divide mixture among the phyllo cups.
 
Place on a baking sheet. Bake at 350 degrees F for 25-30 minutes or until eggs are completely set and pastry is golden brown.
