2 skinless, boneless chicken breasts
1 (15 oz) can tomato sauce
¼ cup salsa
1 package taco seasoning mix
2 cups minute rice
2 cups Mexican cheese
10 large tortillas
Directions:
Remove fat and cut chicken into small pieces.
In a small pot, boil 2 cups of water. Add in 2 cups of dry minute rice and simmer for 5 minutes. Cover, remove from heat and let sit for 5 minutes.
Place chicken and tomato sauce in a medium saucepan over medium high heat. Bring to a boil.
Add the salsa, and taco seasoning. Boil until the chicken is done.
Stir in cooked rice and simmer for 5 additional minutes.
On a tortilla, place a line of chicken and rice down the middle of the tortilla. Sprinkle with cheese. Roll tightly into a burrito. Use toothpicks to secure. Cut in half to serve.
