Blueberry Muffins

MuffinIngredients:

1 ¾ cup flour
1/2 cup sugar
1 Tablespoon baking powder
½ teaspoon salt
¾ cup milk
1/3 cup oil
1 egg
+1 cup fresh or frozen blueberries

Directions:

  1. Preheat oven to 400˚
  2. Spray muffin tins with cooking spray. (12 large or 24 mini)
  3. In a medium bowl, combine flour, sugar, baking powder and salt. Mix well.
  4. In a small bowl, combine milk, oil, and egg. Beat well.
  5. Add liquid ingredients into the flour mixture all at once. Stir just until dry ingredients are moistened. (Batter will be lumpy.)
  6. Fold in the blueberries. Stir Gently.
  7. Divide batter evenly into muffin cups.
  8. Bake at 400˚ for 15-20 minutes or until toothpick inserted in center comes out clean.
